| Zusammenfassung: | Магістерська кваліфікаційна робота присвячена розробці нового виду консервованої продукції з використанням квіток чорнобривців для розширення раціону людського харчування та отримання консервів із хорошими смаковими властивостями. Метою даної роботи є розробка рецептури та технології виробництва консервів з використанням квіток чорнобривців. На підставі отриманих результатів запропоновано рецептури та технологічні схеми консервів. The master's qualification work is devoted to the рroduction of a new type of canned food using marigold to expand the diet of human food and obtain canned foods with good taste properties. The purpose of this work is to develop a recipe and technology for the production of canned marigold. Based on these results suggested recipes and technological schemes of canned food. |
