| Resumen : | Магістерська кваліфікаційна робота присвячена визначенню змін показників рН і окисно-відновного потенціалу у фруктах при їх зберіганні за різної температури. Метою даної роботи є визначення впливу різної температури на зміну водневого показника і окисно-відновного потенціалу у фруктах при їх зберіганні. Master's qualification work is devoted to the determination of changes in pH and oxidation-reduction potential in fruits when stored at a reduced temperature. The purpose of this work is to determine the effect of low temperature on the change of hydrogen index and redox potential in the storage of fruit juices, as well as to determine the influence of pH and ORP on the human body. |
