| Abstract: | Магістерська кваліфікаційна робота присвячена визначенню факторів, що впливають на рН і ОВП у плодах і овочах при їх зберіганні.
Метою даної роботи є визначення впливу температури на зміну водневого показника і окисно-відновного потенціалу при зберіганні плодів та овочів, а також визначити вплив рН і ОВП на організм людини. Master's qualification work is devoted to determining the factors which influence the pH and ORP in fruits and vegetables during storage. The aim of this work is to determine the effect of temperature on the change of the pH value and the redox potential during storage of fruits and vegetables, and to determine the impact of pH and ORP on the human body. |
